Banana breads... Yes, bread'S'!

Banana bread is super yummy and super easy to make! Today, I made 3 different kinds. Regular banana bread, chocolate chip banana bread, and peanut butter banana bread! I have a wonderful recipe I have been using for years and is always a hit! I have modified it through the years when making a loaf vs. muffins and they always turn out great! Today, I went a step further and made mini-loafs so I could make 3 different kinds. First, I start all of them with the same basic recipe that I have been using for years.

Banana bread

- 3-4 very ripe bananas
- 2 eggs
- 3/4 c. brown sugar
- 1/2 c. butter (can substitute 1/2c. unrefined coconut oil)
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt (optional, not to be used if making peanut butter)
- 3/4 c. creamy peanut butter (when making peanut butter banana bread)**
- 3/4 c. semi-sweet chocolate chips (when making chocolate chip banana bread)

Cream all your wet ingredients (bananas, eggs, brown sugar and butter) together first. Next slowly add in 1 c. of flour at a time, mixing well. Add baking soda and salt. Mix until the dry ingredients are well incorporated.



If making a regular sized loaf:

Grease a loaf pan, either with butter or cooking spray. Pour in the batter. Bake at 350* for 60-65 minutes, or until a toothpick can be inserted in the middle and comes out clean. Makes 1 loaf.

If making muffins: 

Place muffin cup liners and pour batter in until the muffin cup is approx 1/2 full. Bake at 350* for 25-30 minutes, or until a toothpick comes out clean. Makes approx 12-16 muffins.

If making mini-loafs:

Grease the mini-loaf pan with butter or cooking spray. Fill each loaf with batter until it is approx 1/2 full. Bake at 350* for 30-35 minutes, or until a toothpick comes out clean.

**Note: I have found that when making the peanut butter banana bread, it's best to bake at 325*, otherwise it seems to dry the edges a little more. You will only need to add about an extra 5 minutes onto the baking time.
