I have made this recipe several times, as freezer meals and just by combining the ingredients in the crockpot raw before leaving for work. It turns out amazing every time! Just serve over egg noodles or rice. One thing I do to make this meal just a little cheaper since it has beef in it is instead of buying stew meat from the store, buy a cheaper cut of steak and cut it up yourself into approx 1" pieces. When you buy stew meat from the store, you are paying for them to cut it up into pieces. If you buy a piece of meat and cut it yourself, you can save about $1.00-$2.00 a lb! This recipe will make enough for my husband and I to each get 2 meals out of it. Feel free to double the recipe or more if you're feeding more people. Cook time should be about the same in the crockpot, but if you doubled the recipe and are cooking from frozen, be sure to leave a little extra time at the end just in case! 8 hours should be plenty. Beef Stroganoff
- 1/2c. diced onion
- 1/4c. butter
- 1lb of stew meat
- 2c. chopped mushrooms
- 3/4c. sour cream
- 1 12oz can cream of mushroom soup
- 1/2c. cream cheese
- 1tsp salt and pepper (each)
Combine all the ingredients except the meat, mixing well. Add the meat to the mixture and either place in a freezer safe bag or a vacuum sealer bag to place in the freezer.
When ready to make, pull out of the freezer and place in the crockpot on low for 8hrs. Yes, it can go in the crockpot frozen! Serve over egg noodles or rice!
